This simple salad can be tossed together in under fifteen minutes. It is nutrient-packed, low in calories and includes superfoods like quinoa and avocado. It is rich in protein, fibre and healthy fats. It is meat, dairy, gluten and sugar-free.
Ingredients:
1 tbsp water
2 tbsp coriander leaves
Juice of one lime
4-5 cloves garlic, minced
1/2 tsp honey
1 tbsp red wine vinegar
2-1/2 tbsp olive oil
Salt and pepper, to taste
2 cups quinoa, cooked
2 cups cherry tomatoes, sliced into half
2 avocados, sliced fine
2 cups of corn
1/4 cup black olives
1/2 onion, sliced
3-4 green chilies, sliced
Makes 6 servings
Method:
Blend together the water, coriander, lime juice, garlic, honey, vinegar, olive oil, salt and pepper to make a vinaigrette salad dressing. Set aside.
In a large bowl, toss together tomatoes, avocados, corn, olives, onion and green chillies. Carefully stir in the quinoa until the fruit and vegetables are evenly distributed.
Pour over the salad dressing and mix well so that it is fully incorporated. Tastes best when served cold.
