This summery salad combines the sweet taste of mango with the rich flavours of sweet potato. Complimented by fresh spinach leaves and honey, this healthy salad is packed with nutrients and flavour.

Ingredients:
1 sweet potato, diced
1/4 tsp turmeric
1/4 tsp chilli powder
1/4 tsp cumin seeds, ground
1/4 tsp ginger powder
1/4 tsp ground coriander
Salt and pepper, to taste
1 tsp honey
1 tbsp water
3 cups spinach
1 mango
1/2 onion, sliced
5-7 jalapeno slices (optional)
1 tbsp lime juice
1 tbsp coriander leaves
Serves 2
Directions:
Toss sweet potato cubes in honey, water, ground coriander, ginger, jeera, turmeric, chilli powder, salt and pepper. Spread on a greased bake tray and place in an oven preheated to 220°C for 10-15 minutes until tender. Remove from oven and set aside to cool.
Peel the mango, remove the seed and chop into cubes. Combine with spinach, onion, and jalapenos and toss the sweet potatoes in.
Pour lime juice over the salad as a dressing and garnish with chopped coriander leaves.
